Power Balls

The Power balls are amazing to have for breakfast or as a snack especially if you are in a hurry and need just something you can grab and go.


  • 1 cup Oats
  • 2 cus Almond Meal
  • 3 tsp Baking Powder
  • 4 tbsp Honey
  • 4 tbsp Coconut Oil
  • 1 cup Cooked Carrots
  • Crushed almonds or pecans
  1. 1. Grind the oats in a food processor to make oatflour
  2. 2. Mix oatmeal with almond meal and baking powder
  3. 3. Mix well and add honey
  4. 4. Melt coconut oil in a pot and then add to the miture
  5. 5. Mash cooked carrots or blend in food processor until smooth
  6. 6. Add the mashed carrots into the mixture in the bowl and mix well to create a dough for the balls. The dough should be moist and little bit sticky – if you find it too soft you can always add little more almond meal. The amount of dough you need for one ball depends on how big you want them to be.
  7. 7. Roll balls in crushed nuts to cover completely
  8. 8. Place the balls in a non stick baking sheet and bake at 350F for 25 minutes
  9. 9. Let cool completely before removing from baking sheet. Store in the fridge.
